Botrini’s is the realization of a dream to bring gastronomy closer to people, with due respect to seasonality, quality and the indigenousness of raw ingredients. A menu of fusion dishes is heavily influenced by flavours and experiences arising from Botrini’s travels and childhood memories, allowing food expressions to flow freely, sharing experiences and moments cherished in a “forever mood”.
The restaurant is set on a grand terrace in the heart of the main building, benefiting from majestic views of sea and sky.

Ettore Botrini
The Corfiot-Italian Ettore Botrini was born in1969 and brought up in Corfu. In and, he had practical training alongside his friend and 3 stars awarded chef Martin Berasategui. Ettore began his career in 1986 working with his father Etrusco Botrini, a chef himself, in numerous Club Meds’ all over the world. After, he worked in the family business “Etrusco” restaurant in Corfu regularly recognized as among the best restaurants in Greece. In 1993-94 Ettore Botrini worked in various Michelin-starred restaurants in Monaco and France before returning to Corfu in 1999 in order to take over as the head chef of “Etrusco” restaurant. He continued his training, moving to Spain 2006 where he attended a number of seminars in molecular cuisine and completed his practical course.
